KEY LIME PIE

            Yield: 1 Pie
      
       
      
            3 ea Eggs
           14 oz Sweetened condensed milk
            4 oz Key lime juice
          1/3 c  Sugar
            1 ea 9 inch pie crust
      
      
         Separate egg whites from yolks. Put each in it's own mixing
        bowl. Blend the yolks and the milk on low speed, when blended
        well add lime juice a little at a time while still mixing. Pour
        into pie crust. Chill for one hour.
      
        Preheat oven to 350 degrees.
      
        Beat egg whites with a pinch of salt until they hold soft
        peaks, add the sugar, beating, 1 tablespoon at a time, and beat
        the meringue until it holds stiff peaks. Spread the meringue
        over the filling and bake the pie in the middle of preheated
        over for 15 minutes, or until the meringue is just golden.
        Chill pie for 2 hours.
