PICKLED GREEN TOMATOES
Categories: Appetizers, Relishes, Vegetables , Jeff's Yield: 5 servings 5 lb Firm green tomatoes 10 ea Garlic cloves 5 ea Hot peppers 2 qt Water 1 qt White vinegar 3/4 c Salt 5 ea Stalks of celery 5 ea Heads of fresh dill 2 1/2 ts Dill seed Wash tomatoes; slice 1/2 inch thick. Pack loosely with garlic, pepper and celery into hot quart jars. Also 1 head of dill and 1/2 t of dill seed in each jar. Heat vinegar water and salt to a boil, if desired simmer dill- weed with the brine. Fill jars to within 1/2 inch of top. Process for 15 minutes. Season for 4 to 6 weeks before using.
